Corn Fritters

Use care not to cook too many fritters at one time or the oil temperature will drop and the fritters will not be as light.

Ingredients

  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 cup flour
  • 1/4 cup sugar
  • 1-1/2 teaspoons Argo® Baking Powder
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 3 to 4 cups corn oil

Directions

  1. Place corn in food processor or blender and process corn until coarsely chopped; set aside.
  2. Combine flour, sugar, baking powder and salt in a small bowl. Stir in corn and eggs until well blended.
  3. Pour oil into large skillet, filling no more than 1/3 full. Heat over medium-high heat to 375°F.
  4. Drop tablespoonfuls of corn mixture into oil, a few at a time. Fry 1 to 2 minutes, turning once until golden brown. Drain on paper towels.
